Beignet Justin Wilson Style

This recipe makes 20 good size beignets. When it’s just the two of us, I cut the recipe in half.  You can use a regular pot to cook these in, or if you plan to do it frequently use the automatic fryer called CoolDaddy.

Here’s the recipe. Enjoy!

2 cups of flour                                                3 tablespoons sugar

1 teaspoon  salt                                            1 cup milk

1 tablespoon baking powder                      1/4 teaspoon vanilla extract

1 tsp ground cinnamon (optional)              1 quart oil for deep frying

1 medium size egg                                       confectioner’s sugar

 

Half fill  a large deep pot with oil and heat to 375 degrees F. Sift together the flour, salt, baking powder, and cinnamon into a large mixing bowl. In a separate bowl, beat the egg well, then beat in the sugar, milk and vanilla. Pour the egg mixture into the flour and mix slightly until moistened. Turn onto a floured surface and knead lightly.  Roll the dough out to 1/4 " thickness.  Slice into diamond shapes about 3" long. Fry in oil, turning once until they are puffed up and golden.  Remove and drain on paper towels, and sprinkle with confectioner’s sugar. Serve immediately with hot cafe au lait.

 

Note: never leave the stove with hot oil heating. Use potholder mitts to protect yourself from grease spatters.
